It’s Time for Spring-Inspired Pasta Dishes

Springtime Pesto Pasta

Serves 4

Ingredients

1 pound pasta
Olive oil
1 bunch asparagus, trimmed and cut into 1-inch pieces
1 ½ cups prepared pesto
1 (10 oz) bag frozen spinach, thawed and squeezed dry
¾ cups mayonnaise
Juice from 1 lemon
Salt, to season
Freshly ground black pepper, to season
1 ½ cups green peas
½ cup pine nuts
⅓ cup grated parmesan cheese

Directions

Cook the pasta according to package directions. Drain and then place the pasta into a serving bowl. Drizzle with a little bit of olive oil and toss.

While the pasta cooks, blanch, roast, or sauté the asparagus pieces.

Place the pesto, spinach, mayonnaise, lemon juice, salt, and black pepper into a food processor and puree. Spoon the pesto mixture into the bowl with the pasta and toss.

Place the asparagus pieces, peas, pine nuts, and grated parmesan cheese into the bowl with the pasta; gently stir to combine.
