Jalapeño Cheeseburgers

Serves 4

Ingredients

⅓ cup mayonnaise
3 tablespoons prepared barbecue sauce
1 large egg
1 ½ pounds 80/20 ground beef or ground chuck
¼ cup panko
1 shallot, minced
2 garlic cloves, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon black pepper
4 slices cheddar cheese
4 hamburger buns
Lettuce, for topping
Tomatoes, for topping
Bacon, for topping
Red onion, for topping
Jalapeños, for topping

Directions

Place the mayonnaise and barbecue sauce in a small bowl; combine, then refrigerate until ready to eat.

Place the egg in a large bowl; whisk. Add the ground beef, panko, shallot, garlic, Worcestershire sauce, oregano, salt, cumin, paprika, and black pepper to the bowl; mix until just combined. Form the mixture into 4 equal patties. Using your thumb, make an indentation in the center of each patty. If you won’t cook the burgers immediately, place the uncooked patties in the refrigerator for 15 minutes.

Oil the grill grate and heat the grill over medium-high heat. Once the grill grate is hot, place the patties on the grill and close the grill lid. Cook for 4-6 minutes. Flip the patties and cook for 4-6 minutes or until desired doneness is reached. During the last minute or two of cooking time, place 1 slice of cheese on each patty; continue cooking until the cheese melts. Transfer the patties to a plate. Assemble the burgers and serve with the BBQ mayonnaise.
