Asparagus: A True Taste of Spring

Fresh from the farm to your plate, this grilled asparagus salad celebrates spring’s most anticipated vegetable in all its glory. Lightly charred asparagus spears and tender baby spinach create an eye-catching plate of verdant greens. A simple drizzle of olive oil and lemon juice is all that’s needed to highlight the natural flavors of this quintessential springtime duo.

Grilled Asparagus Salad

Serves 6

Ingredients

¼ cup olive oil
2 tablespoons lemon juice
12 fresh asparagus spears
Salt, to season
Black pepper, to season
6 cups fresh baby spinach
Parmesan cheese shavings

Directions

Prepare the grill for high heat. Lightly oil the grill grate.

Place the olive oil and lemon juice into a baking dish and whisk to combine. Add the asparagus spears and toss—season with salt and pepper.

Place the asparagus on the grill. Reserve the remaining olive oil mixture in the baking dish. Grill asparagus for approximately 5 minutes, turning once or twice, until lightly charred and fork tender. While grilling, brush on some of the remaining olive oil mixture.

When the asparagus has finished cooking, remove it from the grill. Cut the asparagus into bite-sized pieces.

Place the baby spinach and grilled asparagus into a serving bowl. Drizzle with any remaining olive oil mixture from the baking dish. Serve with Parmesan shavings.
