Fettuccine with Garlic Shrimp

Serves 4

Ingredients

8 oz fettuccine or linguine
1 lb uncooked medium shrimp, peeled and deveined
Kosher salt
Freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, divided
½ teaspoon dried oregano
½ teaspoon crushed red pepper flakes
5 cloves garlic, minced
2 cups baby spinach or baby arugula (optional)
3 tablespoons freshly grated Parmesan, plus more for serving
Chopped fresh parsley leaves, for garnishing

Directions

Cook pasta according to the package directions; drain well.

Place shrimp in a bowl; season with salt and black pepper and set aside.

Place a large skillet over medium-high heat. Add 2 tablespoons of the butter to the skillet. When the butter has melted, add oregano and red pepper flakes to the skillet; cook and stir for 1 minute. Add minced garlic to the skillet; cook and stir for 1 minute. Add shrimp to the skillet; stir and cook for about 2-3 minutes, until shrimp is pink. Transfer cooked shrimp to a new, clean bowl.

Add the remaining 6 tablespoons of butter to the skillet. When the butter has melted, add the cooked pasta, baby spinach (or baby arugula), and 3 tablespoons of Parmesan to the skillet; stir ingredients until spinach begins to wilt. Add the shrimp back into skillet and toss to combine.

Once plated, garnish the pasta with chopped parsley and serve with additional Parmesan.
