Gourmet Burgers for Your Memorial Day Cookout

Blue Cheese Burgers

Serves 4

Ingredients

For the Caramelized Onions
2 tablespoons olive oil
2 tablespoons butter
4 large yellow onions, sliced ¼-inch thick, rings separated
1 tablespoon brown sugar

For the Beef Patties
1 ½ lbs ground beef
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
4 oz crumbled blue cheese
4 large burger buns
Mayonnaise
Dijon mustard

Directions

For the Caramelized Onions
Set a heavy skillet over medium heat. Add the olive oil and butter to the skillet. When the butter has melted, add the onions to the skillet; stir to coat. Cook onions, uncovered, for 10 minutes or until they begin to brown. While onions are cooking, stir them every couple of minutes. When the onions have started to brown, sprinkle them with the brown sugar and lower the heat to medium-low. Continue stirring and cooking the onions for about 15 to 25 minutes; they will continue to brown. The longer you cook the onions, the more caramelized they will become. If the onions look or smell like they are beginning to burn, lower the heat. When the onions are ready, they will be soft but not mushy. Place caramelized onions in a dish and set aside.

For the Beef Patties

Prepare a grill and spray the grill grate with a non-stick cooking spray. Place the ground beef in a large bowl. Season the beef with salt and black pepper; lightly mix. Shape the meat into four 4-inch-diameter patties, making sure the center of each patty is thinner than the outer portion. Cook the patties on the grill for 8 minutes. Flip the patties over. Evenly divide the crumbled blue cheese on top of the patties. Continue cooking the patties for approximately 5 minutes or until the internal temperature reaches 160 degrees when tested with a meat thermometer.

While the patties cook, toast the buns by setting them cut side down on the grill’s cooler side. Once toasted, remove the buns from the grill. Once the patties have finished cooking, assemble the burgers. Spread some mayonnaise and mustard onto the buns, add the beef patties to the bottom buns, and add caramelized onions on top of the patties. Add top buns. Serve.
