Prepare a grill for direct grilling over high heat.
Place the beer, onions, garlic, ginger, caraway seeds, coriander seeds, and mustard seeds in a large grill-proof stockpot; stir. Add the bratwurst to the stockpot, then set the stockpot onto the prepared, hot grill.
