Watermelon-Lime Sorbet

Serves 6

5 ½ cups fresh seedless watermelon chunks
3 teaspoons freshly squeezed lime juice
Warm water, as needed

Line a rimmed baking sheet with parchment paper. Set the watermelon chunks onto the baking sheet, then freeze the watermelon overnight.

Once the watermelon chunks are frozen, place them into a food processor or heavy-duty blender. Add the lime juice to the food processor or blender. Let the watermelon and lime juice sit for a couple of minutes so the watermelon can slightly thaw, then blend until smooth. If needed, add a bit of warm water a little at a time to help the ingredients process thoroughly.

You can eat it as is or transfer it to a freezer-safe container and freeze until firm, about 4 hours. Try it with a sprinkle of freshly chopped mint.
