Tiramisu Pops: An Italian Dessert Reimagined

These pops deliver the sophisticated flavors of tiramisu in a refreshing, portable form by layering brewed coffee with a custard-mascarpone mixture into popsicle molds. With optional rum for depth and a dusting of cocoa for authenticity, they offer a perfect balance of indulgence and coolness for discerning palates.

Tiramisu Popsicles

Ingredients

½ cup brewed coffee
6 tablespoons sugar, divided
2 teaspoons vanilla, divided
1 tablespoon rum (optional)
3 egg yolks, room temperature
⅔ cup whole milk, divided
1 (8 oz) package mascarpone cheese
Cocoa powder, for dusting

Directions

Place the brewed coffee and 1 tablespoon of sugar in a small saucepan set over low heat; whisk until the sugar dissolves. Remove the saucepan from the heat. Whisk 1 teaspoon vanilla into the coffee mixture, as well as the rum, if using. Divide the coffee mixture evenly into 7 standard popsicle molds. Freeze until the coffee is slushy but not completely frozen, about 1 hour.

Prepare the custard approximately 20 minutes before the coffee in the popsicle molds should be slushy. Place some ice into a large bowl, then nestle another bowl into the ice; set aside. Place the room-temperature egg yolks into a medium saucepan and whisk until emulsified. Continue whisking and add in the remaining 5 tablespoons of sugar. Set the saucepan over low to medium heat. While whisking, add in ⅓ cup milk. Continue whisking until the mixture comes to a boil, then continue whisking for one minute more. Transfer the custard to the bowl nestled in the ice and cool for 10 minutes. Whisk in the remaining 1 teaspoon vanilla, remaining ⅓ cup milk, and mascarpone cheese into the cooled custard. Divide the mixture evenly over the slushy coffee layer in the popsicle molds. Insert popsicle sticks into the molds and freeze overnight.

To remove the popsicles from the molds, carefully and quickly run the molds under hot water. Once removed, dust the popsicles with cocoa powder. Enjoy!
