Treat Your Taste Buds to an Ultimate Grilled Cheese Sandwich

This grilled cheese sandwich gets the gourmet treatment with Gruyère cheese and roasted-to-perfection mushrooms and onions. Use a sweet onion for ultimate caramelized flavor and your favorite mushroom variety. You can use Gouda or Brie cheese instead of Gruyère if you want.

Gourmet Grilled Cheese

Ingredients

1 medium sweet onion, peeled and sliced
2 tablespoons olive oil, divided
Salt, to season
Freshly ground black pepper, to season
8 ounces mushrooms, cleaned and sliced
4 tablespoons butter
4 slices bread of your choice
1 cup shredded Gruyère cheese

Directions

Preheat the oven to 400ºF.

Place the onion slices on a baking sheet. Drizzle the onion slices with 1 tablespoon of olive oil and season with salt and black pepper; stir. Roast the onion slices for 20 minutes.

While the onion slices are roasting, place the mushroom slices in a bowl. Drizzle the mushroom slices with the remaining 1 tablespoon of olive oil and season with salt and black pepper; stir.

Remove the onion slices from the oven after 20 minutes. Add the mushroom slices to the baking sheet with the onion; stir. Place the baking sheet back into the oven and roast the vegetables for 20 minutes. Remove and set aside.

Melt the 4 tablespoons of butter in a skillet set over medium heat. Assemble the sandwiches while the butter is melting. On two bread slices, evenly distribute ½ of the shredded Gruyère, roasted mushrooms and onions, and then the remaining shredded Gruyère. Salt and pepper to taste. Top with the remaining two slices of bread. Gently press on the sandwiches.

Set one sandwich in the melted butter, then immediately flip the sandwich over. Repeat with the second sandwich. Let the sandwiches cook until they are golden brown on the bottom. Carefully flip each sandwich over and cook until golden brown on the bottom and the cheese has melted. Serve.
