Give Mom a break from cooking on Mother’s Day and make this delectable dish that will put a smile on her face and make her feel extra special. Pasta and seafood dishes always elevate a meal, and this recipe is easy enough that beginners can pull it off.
Cook pasta according to the package directions; drain well.
Place shrimp in a bowl; season with salt and black pepper and set aside.
Place a large skillet over medium high heat. Add 2 tablespoons of the butter to skillet. When the butter has melted, add oregano and red pepper flakes to skillet; cook and stir for 1 minute. Add minced garlic to skillet; cook and stir for 1 minute. Add shrimp to skillet; stir and cook for about 2-3 minutes, until shrimp is pink. Transfer cooked shrimp to a new, clean bowl. Add remaining 6 tablespoons of butter to the skillet. When the butter has melted, add in the cooked pasta, baby spinach (or baby arugula), and 3 tablespoons of Parmesan. Stir ingredients until spinach begins to wilt. Add the shrimp back into skillet and toss to combine.
Once plated, garnish with chopped parsley and serve with additional Parmesan.
